Food blogger over here.

I had a really great-ish weekend. Summer like weather finally showed up so I wore some summer dresses and hosted a little BBQ with Alex with some friends too. Yummy burgers on the grill, cards against humanity, just really nice.

I also made lots of paleo friendly food, and didn't tell anyone *hehehe*

Lettece wrapped burgers, lots of veggies and Chocolate chip cook dough brownie for dessert. Oh yes, it was that good. 

I do admit I'm not the best baker..yet. These fell apart as soon as a finger touched them which made me so annoyed. Just gotta make them again right?!



Raw, No Bake Chocolate Chip Cookie Dough Brownie
Ingredients
Brownie:
  • ⅓ cup raw pecans
  • ½ cup almond flour
  • 4 tablespoons raw cacao powder
  • 5 pitted medjool dates
  • ½ tsp vanilla extract
  • ½ tablespoon coconut oil, melted
Cookie Dough:
  • 6 tablespoons coconut oil, melted
  • 3 tablespoons coconut milk, full fat
  • 1½ tsp vanilla extract
  • 1 tablespoon raw honey
  • 1½ cups almond flour
  • ½ cup chocolate chips
Instructions
Brownie:
  1. using a food processor or a blender grind the pecans into course meal and place it in medium bowl
  2. remove pits from dates and process it into a creamy paste
  3. using your hands, mix together the pecan meal with the almond flour, cacao powder, date paste, vanilla extract and coconut oil until all ingredients are combined
  4. line a 7×5-inch baking dish with parchment paper and spread the mixture until evenly distributed
Cookie Dough:
  1. in a large bowl, whisk together the coconut oil, coconut milk, vanilla extract and honey
  2. add almond flour and mix just until all ingredients are combined. Do not over mix
  3. gently fold in chocolate chips
  4. spread the cookie dough mixture on top of the brownie and use a piece of parchment paper to smooth the top of the cookie dough
  5. refrigerate until dough is firm, approximately one hour

Recipe serves 10+ people. Store in an airtight container in the refrigerator.

Far from perfect

One of the reasons I love blogging is because I can show that I'm far from perfect.

I find that it's so easy for bloggers to just post the happy things. Not the deep things. Only the "my life is so good!" stuff. Now I do have to say, I completely understand that bloggers have the right to chose what they post.
So if they choose not to write about something, I get it.

Yesterday I was a bad friend. Yesterday I let my anger and frustrations get the best of me and I feel terrible.

I have these two friends at school that are the complete opposite of myself and my study habits. My one friend (let's call her Emily) will come to class, and at break time it will come up that we have a test the next day and Emily wouldn't even know! Even though we have a course outline with a weekly schedule.

She was the one that came to our Psych exam in December with no pencil.

Not to mention that everyone will laugh when this happens. It's not funny. I don't think its funny when you are farting and fooling around. It's not funny that you took a persons spot in this program and you are dicking around. I do think of myself as a caring person so this is why it's so hard to watch the girls mess up and not stand up on their own.

My other friend, call her Julia comes to me for everything. Every question, she comes to me.

"what time is our training today?"

"where is our training today?"

"how to do get there?"

"how do I cite ____?"

"who's our faculty advisor?"- in the middle of our training.

Julia has this habit of texting me in the morning as I'm getting ready. This happened on tuesday, she texted me and didn't know where our training was. I totally didn't have time to look up the building name, room number etc because I had 20 minutes till my bus came and my hair needed to be fixed.

So yesterday I couldn't hold it in. The amount of times and the amount of questions were getting out of hand. I was starting to feel like I was Emily and Julia's mom, walking them through school.

Emily and Julia knew something was wrong and kept asking but it's kinda awkward to answer when they're the problem.

After lunch yesterday, Julia and I went to the guidance office to swap classes and such. As I was coming out of the office Julia asked me a simple question in which I lost it.

She asked when she has Sociology 104. The reason I freaked? We aren't in the same class that day. Meaning I don't know her friday class schedule. Why would she think I knew her class times?! Beyond me.

I looked her in the eyes and said, "I don't know your schedule, Julia" and walked away. I was livid. It scares me, how they don't do anything them selves and rely on others.

She caught up to me and continued to ask why I was upset. In which I said, "stress."

Finally I let it out.

She needed to know how I felt. I feel like I take care of her and Emily more than myself. I feel like my own assignments come second as I'm helping them. Which I don't mind, but every 5 minutes means I can't focus on my own essay. When all we talk about is how you haven't started the essays and its due in 3 days just gets to me.

I know some might say, just ignore the texts and calls. But I can't. I guess part of me remembers Karma.  My biggest fear is needing help with something, clarification on a question etc and not having my friends help me out because I have never been there for them in the past.

Julia and I had a good heart to heart. We needed it as I've been holding this in since mid-term..of last semester.

I feel horrible. My anger is my downfall and once again I couldn't control it and once again I bottled it up inside of me.

See? I am far from perfect.

Leave Michelle Alone!

As you know, I'm a sucker for Celebrity gossip. I don't buy US weekly..weekly but I do check US weekly.com a few times a week just to stay up to date.

With this said...PLEASE STOP TALKING ABOUT THE KARDASHIAN WEDDING!
Why are we giving  so much air-time to a couple who broke their vows after 72 days?! Like where is the air-time for those who have lasted like um...both set of my grandparents who both respectively celebrated 50 and 60 years of marriage this past summer? Where's there shout out?!

Moving on.

So on Tuesday I was walking out my psych exam with my two friends when MTV Live stopped us to ask if we could answer some questions for them. After some hesitation we agreed to answer some questions about...The Kardashian wedding. Of course.

I'll be honest as soon as I heard the topic, I got excited! I have my thoughts and I was happy to air them. I let loose.

The guy asked us if we thought the divorce was a disgrace to the marriage institute and I said of course, my parents have been married for 29 (together for 32) and you don't just get a divorce when things get tough.

My personal thoughts and a question the guy asked, I think she jumped into everything to fast, I believe that yes she liked Kris but not "love" him enough to be with him  60+ years down the road.

It hurts me, someone who more than anything wants to get married, to see couples/individuals throw away this wonderful thing.

US weekly reported on Monday that The Duggards are expecting their 20th child in April. (Do I sounds like a celebrity blogger?!)

I've seen way to many hurtful comments on the 'net and honestly? It needs to stop. JB and Michelle are grown adults, meaning they are capable of making smart, responsible decisions about adding to their family. Yes, it's not normal for a women to birth 20 kids and sure, the female body probably isn't  made to grow 20 children but I'm sure they know what they are doing. Whatever happened to saying "I'll pray for a safe pregnancy/ labor and delivery? No need to be nasty.

T.G.I.F's


When you think of friday, you think ,"We made it another week and now its time to relax!" 'Two days without the boss!" 

Well...not anymore for me. 
You see, I have class friday's from 9-12 and 2-5pm. I walk up at 7, stand with every other person in toronto on the subway which is packed full to the brim, listen to a lecture, have lunch and sit thru the most boring class ever! Once 3pm rolls around I am dead. Like, class-isn't-over-but-I-want-to-leave NOW, dead. My close friends and I hate fridays now. Today my friends and I went to sushi for lunch, we were talking about how we dislike fridays because it's such a long day. My friend Vanessa said she loves mondays now since both her and me have the day off and hate Friday's.  Isn't it the opposite?! And, don't get me started on traveling home on a friday night at 5:30pm. It's insane. 

By the time I get home by 6pm, I am a zombie. All I want to do is sleep and wake up saturday morning. Since sleep is over-rated I catch up on grey's anatomy with a cup a hot local apple cider. So good :) Sometimes, just sometimes friday's get a bit better.

Cutest wedding.



I've been told a billion times I look like my momma here.

On Saturday, Karen and I were invited to Immanuel's and Jocelyn's wedding. We all go to church together. Im (pronuced: em) and Jocelyn have both been such role models in my Christian walk. Loved that I got to celebrate with them!

It was so nice to get all dolled up and go shopping for new things to wear!

The second last photo is the gift I gave the couple. Its from this store from etsy. It's a perfect gift for a couple who just bought their first house together, it would look great over the mantel. *My thoughts, wasn't paid to say the nice words*

Because it was a Filipino wedding (aka: lots and lots of family) we weren't invited to the reception after. That was perfectly okay, we understood and at least we got to witness Im cry when he saw Jocelyn walk down the aisle :) That my friends is the best moment of a wedding.

Cocktails and good company

Yesterday was a good day. Why, you ask?Well, I spent the evening with some great people.

I got together with two girlfriends who I hadn't seen in a long time. Nicole (not the mean one) and Meghan.  Nicole and I did the victory lap together and we haven't spoken since january. Meghan went to Waterloo Uni and even though I've seen her last week and we've talked, it was nice to hang out.

We got dolled up and went downtown to a roof top patio where we had many cocktails and good pizza. The cocktails were getting expensive ($8.99 for one!) so we left.

Nicole needed some more money so we got Meghan's ex boyfriend (who I've known since kindergarden) to pick us up and drive us to Gabby's closer to home. (Fyi: them two are still really good friends, good thing)

We ordered nachos and beer (coolers for me, since I don't really like beer)

It was so nice to hang out and catch up with each other. They wanted to know all about my trip to Alberta and the cowboy.

I wanted to get pictures of the girls but that didn't happen. Boo. But I did get one of me before I left.

Monday, Karen and I went into the best dress store ever! I love forever 21, I spent way to much money on dresses but I got 3 of them so I'm okay with it ;)

I loved last night.
Nothing beats good food, good drinks and good friends.
